Did you know you can strain yogurt using a coffee filter, a mug and a spare hour?
I didn’t until this week when I was looking up how to make Labneh after getting frustrated with not being able to find thick enough yogurt here in Croatia. And it worked like a charm.
I’m a big fan of strained yogurt or Labneh. It’s formed the basis of many a deceptively simple dinner. Swirl some of it on a plate, top it with roasted vegetables or seared meats and you my friend have a delicious dinner fit for the very best trendy small-plate restaurant.
This week, I thought I’d use my strained yogurt as part of a very easy pork chop and grilled peaches dish.
I was supposed to give you a cherry sauce recipe to go with the pork because I helped my friend pick cherries in her uncle’s Croatian orchard last week and came away with 2.5 kilos of the suckers.
But when I made a couple of different batches, they didn’t work out how I wanted. So, I went with another seasonal fruit - peaches - and I’m pleased I did. Because peaches are life.
Dukkah is an Egyptian condiment made from nuts, herbs and spices. I whipped up a version of it using what I have in my tiny little Croatian capsule pantry including fried almonds, dried chili flakes, and fennel seeds. There are more versions available in the variations below.
I had some black lentils in the cupboard so used this as the carb element in the dinner. They look so pretty against the white Labneh. But honestly, you could also whip up some basic flatbreads or buy pitas too. Perfect for mopping up leftovers. Again, I’ve included some more carb ideas in the variations.
