Make no mistake. This is not an authentic Bánh mì recipe.
For a start, Bánh mì are made from grilled pork and this is fried chicken. They are baguettes and this a burger. They include pâte and this includes spicy mayo.
This is a complete bastardisation of a bánh mì, so much so I wondered if it’s even right to call it so. But it does have the essence of Vietnam’s famous sandwich. Pickled vegetables, spiced meat, fresh herbs, zingy citrus. It’s a wake-up recipe that is very much needed here in rain-ravaged Portugal (we’ve not seen the sun in so long that sometimes I forget I no longer live in the UK).
Couple it with a herb-heavy, cabbage and carrot Vietnamese-style salad, and you my friend have a dinner worthy of yet another rainy night.
