I freaking love a good baked potato smothered w/butter/sour cream/chives/ shredded cheese. It’s a heart attack waiting to happen but hey - desperate times call for desperate measures!
We had jacket potatoes last night and I use a similar cooking method: I rubbed them down with a dab of bacon grease, microwaved for ~8 minutes, then popped them into a 400°F (205°C) air fryer toaster oven for another 15 minutes or so. I then knocked the crisped up spuds on the countertop to fluff up the insides before serving. The chives plants in the garden are waking up so their first haircut of the year was mixed into an ample scoop of real sour cream which was heaped onto the potatoes along with plenty of butter. I’ve never tried beans as a topping but might have to give that a try next time!
I cook baked jacket potatoes every time my husband goes away. As an American, he cannot understand them and wants no part in my British potato nonsense 😂
