Very helpful post, thank you. I’d love to recreate a rice dish I’ve eaten several times in Lisbon. It’s a garlic & cilantro-infused rice that’s quite soupy, so not similar in texture to your tomato rice. I’ve tried to make it at home, without a recipe, but never getting it 100% correct.
