I never knew that you had to dry them. I always just drained and whacked them on a tray and wondered why they never came out right. Cant wait to try this now!

I've often roasted chickpeas with smoked paprika and chilli flakes, and I now think it is time for a change. I'll give it a go with the Thai-inspired dressing. Unfortunately, I'm doing dry July, so no vinho as an accompaniment :(
